Cheesecake is my sister's forte.
The number and variety of cheesecakes she has made is innumerable and every one is heavenly.
Crust:1/4 cup sugar
1/4 cup chopped almonds
1 cup flour
pinch salt
1/2 cup butter
1 large egg yolk
1/4 tsp. almond extract
Pulse together in food processor. Press by hand into greased springform pan. Bake 8 minutes at 400 degrees. (Carol bakes for just 2-3 minutes)
Filling:
5 pkgs. Philadelphia Brand cream cheese
1 2/3 cups sugar
2 tsp. grated lemon peel
5 large eggs plus 2 egg yolks
1/4 cup heavy cream
3 tsp. Amaretto
1 Tbs. flour
Beat cream cheese then sugar for 3 minutes. Add eggs one at a time; add remainder ingredients. Increase temp to 500 degrees and bake for 10 minutes. Reduce temp to 200 degrees and continue to bake for 1 hour (or more until center no longer wiggles). Cover with foil if browning too quickly. Turn off oven and allow cake to remain in oven 30 minutes longer.
Top with strawberries or favorite topping

Oh, my....I LOVE cheesecake, too! My problem is that when I make these yummy desserts....I can't get by with just a taste, or a sliver!!! ;-)

I love cheesecake too. One hundred years ago when Karen and I were young, the "in" place to go on a nice date specialized in kahlua cheesecake. This sounds so delicious on a hot summer day!

That looks wonderful, L! NY is famous for its cheese cake. I haven't made it in awhile. I make my crust with zwieback.

I've never met a cheesecake that I didn't like. This one looks heavenly. I've never tried to make one from scratch. I guess I'm a lazy baker

I would love to be able to indulge in cheesecake! It looks heavenly. How nice of you to share the recipe. I do have one recipe that uses yogurt instead of cream cheese. Still fattening though....wouldn't you just know it.

Oh, I love cheesecake but cheesecake does not love my waistline! It sounds delicious and worthy of a special treat, though :) I really like the sound of the chopped almonds in the crust!
