Ingredients
- 5 tablespoons unsalted butter
- 1 1/2 pounds boiling potatoes, peeled and 1/2-inch diced
- 1 1/2 cups chopped yellow onions (2 onions)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons minced fresh flat-leaf parsley
- 2 tablespoons minced scallions (white and green parts)
Directions
Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley and scallions. Serve hot.

My family also enjoyed breakfast for dinner occasionally. When we were kids, there was a restaurant in Atlanta (about 30 min. away) that specialized in hash browns and they were such a treat. Thanks for sharing this yummy recipe!
We have breakfast for dinner quite often. That's one of my favorite meals, I can eat breakfast food any time of day.

I often make these hashed browns too. Easy to make and so delicious. Sometimes I add mushrooms too.

MMMMMM! These pictures are making my mouth water. Of course I started a diet, so anything like hash browns I am craving big time! When I lose a few pounds and feel like I can cheat a little bit, I'm making some of these. Thanks for sharing! :-)
I have never seen this recipe for hash browns..and MY John loves them too. He likes his "crispy" though so I would have to brown them heavily. They look great- xo Diaan

I can't tell you how much I am craving your breakfast at this moment, with its buttery potatoes and sprinkling of fresh herbs.
I love potatoes made this way! My mother called them American Fries or Home Fries depending on whether or not the potatoes were boiled first. Always with onions too - delicious. The scallions and parsley are a nice addition.

I make this recipe all the time when my extended family gets together for brunch-- they all beg for it!! These hash browns are sooo good.

Oh, yum! I have only ever had hash browns from a restaurant before (I know- horrible). I don't know why, as they seem really easy to make. I like the addition of scallions in this recipe- I'm sure it adds a little something special.
