
Turkey Wild Rice Soup
A Christmas Day Dinner tradition
2 (10 3/4-oz) cans condensed chicken broth OR 6-cups chicken broth/stock and omit water
2 cups water (omit if using chicken stock)
1/2 cup uncooked wild rice, rinsed
1/2 cup finely chopped green onions1/2 cup uncooked wild rice, rinsed
1/2 cup butter
3/4 cup flour
1/2 tsp salt
1/4 tsp poultry seasoning
1/8 tsp pepper
2 cups half-and-half (I use fat free half-and-half)
1 1/2 cups cubed, cooked, turkey or chicken
8 slices bacon, crisply cooked, crumbled
1 tbs. chopped pimento
2 to 3 Tbs. dry sherry, if desired
I large saucepan, combine chicken broth and water. Add wild rice and green onions; cover. Bring to a boil. Reduce heat; cover simmer 35-40 minutes or until rice is tender.
Lightly spoon flour into measuring cup; level off. In medium saucepan, melt butter: stir in flour, salt, poultry seasoning and pepper. Cook 1 minute, stirring constantly; until smooth and bubbly.
Gradually stir in half-and-half; cook until slightly thickened; stirring constantly.
Slowly add half-and-half mixture into rice mixture; stirring constantly.
Add remaining ingredients
Heat gently, stirring frequently; do not boil. Garnish each serving with additional green onion and bacon.
NOTE: You can tell this is an old recipe because I don't think Campbell's makes cans of condensed chicken broth any more.

Looks and sounds wonderful Lorraine! I bought a Taste of Home soup cookbook, and try one every 8-10 days! The sweet potato and black bean chili is divine!! I may have to buy some turkey and try this!!

This would be all I'd need to be happy on Christmas Day! There is such a thing as fat-free Half and Half?! I'll have to look for it. Thanks for sharing the recipe!♥♫

Yummmm! I love the *old* recipes. ... especially the ones that say *place flour in PAPER BAG with salt and pepper, add meat and toss together* .... the days before plastic bags! Maybe "they" had the right idea! :D :D :D

No turkey leftovers is the sad result of having celebrated at another`s table - talk about mixed blessing! We had a wonderful dinner but no sandwiches and soup to enjoy later. My solution is to buy a turkey and cook it at New Year!
Oh Lorraine this looks and sounds SO good. I can hardly wait to make it with my turkey leftovers. And I have everything on hand including

Yum...it looks good. We ate up all of our turkey and are grilling chicken tenders along with a slow cooker of scalloped potatoes. Good stuff quick....grin. Merry Christmas!

Our son in law made this soup on Thanksgiving and it was fantastic. His version was a tad different, but probably origninated from this recipe. The bacon is a tasty touch, I'm going to add that the next time I make mine. I also through in some leftover brocoli. Great dish!
