Cranberry Mold
This recipe shared from my friend, Anne, when our kids were all small, does not require the cranberries to be cooked. It is tart, sweet and crunchy!
1 bag cranberries (12-oz), finely chopped (I used a food processor)
1 small cherry Jell-O2 Red Delicious apples, finely chopped
1 cup chopped nuts
1 1/4 cup sugar
Make Jell-O using 1/2 cup boiling water and 1/2 cup cold water. Put in refrigerator to thicken slightly. Fold in remaining ingredients until well blended; spoon into serving bowl or mold.
Refrigerate until firm.

Looks yummy but how big a bag of cranberries you used? How many ounces... That would be helpful. Never knew that the cranberries can be used fresh, uncooked that is!

I made a molded salad last week, for the first time in years. It was very well-received.
Being a fan of cranberries, I know I would love this. I used to make a similar recipe but I believe it had apples in it too.
that looks so good. I'm the only one in my family that likes cranberries though so it always seems like such a waste to make anything just for me since it's unlikely that I could eat it all myself.

My daughter Sam and I love cranberries, so every Christmas we stock up on this lovely fruit, and gobble it up—fresh, in baked goods and even smoothies.

Quick question - what am I supposed to eat this with? Can I eat it like jam on bread? Or is it just a dessert? I've never heard of a mold before.
