Lighter fare is the menu after all of the overindulgence through the holidays.
Today it was a hot bowl of Hamburger Barley Vegetable Soup and these tasty little corn muffins from
Patrick and Gena Neely.
They are sweet and moist and if I'm not careful, I could once again overindulge on these!
Honey Cornbread Muffins
Recipe courtesy The Neelys
PRINT RECIPE1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 cup granulated sugar
1 teaspoon salt
1 cup whole milk
2 large eggs
1/2 stick butter, melted
1/4 cup honey
Special equipment: paper muffin cups and a 12-cup muffin tin
Directions
Preheat oven to 400 degrees F.
Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.
Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden.
NOTE: I baked mini muffins for 11-12 minutes and got 3.5 dozen

One of my favorite things! But, unlike you, I tend to lose all control.
I can't possibly be the only one who gains weight by merely standing downwind from a fresh batch of corn muffins, am I?
These cute muffins wouldn't be safe in my house. Corn muffins are great favorite and just out of the oven with a cup of coffee would be a perfect winter breakfast. Take good care, my friend, and keep warm. Hugs to you and John!

I have never tried soup with muffins. For some reason I make only sweet breakfast style muffins. I should make them after my diet is over.

I have a similar recipe from a friend that is called Native American Cornbread ... it's almost like a cake than cornbread. Yum! I always love a good bowl of soup with a yummy bread or muffin. Hope you are having a wonderful Wednesday. Tammy
